Almond-Rice Flour
A general purpose gluten free flour
Ingredients
900 g | 8 cups | white rice flour | 2x – 1 lb bags |
300 g | 3 cups | almond meal (flour) | from blanched or un-blanched almonds |
150 g | 1 cup | tapioca starch | starch, flour – same thing |
200 g | 1 cup | potato starch | starch NOT potato flour |
- sift: almond flour to get uniform size
- sift: potato starch as it tends to cake
- combine in large mixing bowl
- use a whisk to blend thoroughly
- store in sealed container
shelf life is 6 months or more if kept dry and sealed
add Xanthan gum as required for specific recipes
Almond-Rice Bread
A tasty, cake like, gluten free loaf.
Ingredients
3 cups | almond-rice flour |
1 Tbsp | xanthan gum |
2 Tbsp | white sugar |
1 Tbsp | brown sugar |
3 Tbsp | non fat dry milk powder |
1 tsp | salt |
2 Tbsp | olive or canola oil |
2 | eggs * |
develop yeast in a separate bowl
- 9 oz water
- 1 tsp sugar
- 1 Tbsp yeast
- give it 15 minutes or so
combine, in a separate bowl
- combine the sugars, dry milk, salt, oil and eggs
- add the yeast water
- mix thoroughly
- mix in the almond-rice flour and salt
- lastly, add the xanthan gum
add the mix to your bread machine
This mix was developed for use in a Hitachi HB B101 bread machine
* use 1 egg for a less cake-like texture
Pizza Crust
a basic pizza crust
develop the yeast
- 1 cup water
- 1 Tbsp sugar
- 1 tsp yeast
- combine and allow yeast to develop for 15 minutes or so
combine
- yeast
- 2 Tbsp olive oil
- 1/4 tsp salt
- 2-1/2 cups almond-rice flour
- 2 tsp xanthan gum
Note: add additional almond-rice flour to thicken (1/2 cups or so)
- spread dough out on a 12″ x 17″ baking sheet
- allow dough to rise in oven, 20 minutes at low setting with door open
- add toppings
- bake pizza 10-12 minutes at 450
Oatmeal Raisin Cookies
a great breakfast cookie
Whisk together and set aside
- 2 cups almond-rice flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp salt
- 2 tsp xanthan gum
Cream wet ingredients
- 1 cup unsalted butter, softened
- 1-1/2 cup pure cane sugar (Demerara sugar)
- (or 3/4 cup each; dark brown sugar, white sugar)
- 2 large eggs
- 2 tsp vanilla
Combine
- stir flour mix into the wet ingredients, then add
- 3 cups oats
- 1-1/2 cups raisins
Baking
- drop 2-3 tsp dough balls onto oiled baking sheet, 2 inches apart
- bake 11-12 minutes at 350
- allow cookies to sit on baking sheet for 5 minutes
- transfer to cooling rack
makes 3 -1/2 to 4 dozen cookies
